We gourmands love fine cuisine. Innovative dishes, Michelin Stars, uniquely integrated ingredients, molecular gastronomy... you get the idea. But what about sustainability? Does all gourmet cooking need to include waste?  We think not. That’s where “CARE’s – The ethical Chef Days” comes in. This unique project will bring together chefs and people from around the world who all share a common vision: a new, innovative, sustainable, and ethical approach to food. The objective is to develop a new way to teach adults and children, to raise awareness and encourage respect for nature, to promote environmentally friendly attitudes, and to show how to experience our environment without misusing it. This includes reducing waste, reusing leftovers, and recycling garbage. Sustainable gastronomy.

On this incredible itinerary, you’ll enjoy a sampling of the “CARE’s – The ethical Chef Days” program – everything from Cooking Master Classes, Chef Talks, wine, food, tea, and craft beer tastings, incredible gala dinners, and fantastic after parties – all adhering to and furthering the cause of sustainable gastronomy. There’s even a gourmet dinner created entirely with ingredients that are usually considered food “waste,” turning them into culinary delicacies, and in the process demonstrating that (almost) all parts of raw ingredients can be used, and that haute cuisine is not made only with expensive and exotic ingredients and doesn’t necessarily mean waste. 

As if that weren’t enough – the entire conference takes place in one of the most beautiful mountain ranges in the world: the Dolomites. The Dolomite Mountains are simply breathtaking in winter – a pristine mountain landscape blanketed with snow. Well known by skiers for their incredible on- and off-piste terrain, fantastic network of lifts, and an unparalleled 8 out of 10 days of sunshine!

These incredible peaks and long valleys provide extraordinary terrain for winter sports, and have become famous the world over as one of the most beloved areas for winter enthusiasts. But did you know these mountains are also renowned for their gastronomy? The delectable cuisine here is in part a result of multiple cultural influences – Italian, Austrian, and Ladin. This, combined with the diverse geography – Mediterranean to mountain – results in everything from seafood to roasted meats, cheeses and charcuterie, shellfish to wild greens, to fresh herbs and vegetables grown in private gardens. A fantastic place to indulge your palate! With multiple Michelin-star-rated restaurants in the area, and a bevy of luxury hotels, it’s no wonder you can find incredible fare throughout, and what better location for this inaugural event!

We’ve created two fantastic itineraries to allow you to experience CARE’s. On this, our Gourmet Itinerary, it’s all about the food – with Cooking Masterclasses where (you’ll of course get to eat the product of your instruction), Chef’s Talk and Tastings, Gala Dinners, and incredible after parties, plus time to ski, explore, or relax each morning. On our Active Itinerary, you’ll skip the Masterclasses and spend each day skiing, enjoy a gourmet lunch at a rifugio set high on the slopes of the resorts, plus enjoy afternoon and evening Chef’s Talk and Tastings, Gala Dinners, and after parties. We hope you’ll join us, and experience sustainable gastronomy in one of the most glorious mountain landscapes on earth!

Day by Day

Day 1 ~ Sunday, January 17
Arrive in Alta Badia on your own and check into your hotel (private transfer available on request). Alta Badia is a sunny hollow on the south side of the Val Badia (Abbey Valley) in the Alto Adige region. Incredible hiking, skiing, and vistas abound – particularly of the Sella Massif. Home to three cultures – Italian, Austrian, and the native Ladin, most signage in Alta Badia is written in three languages – Italian, German, and Ladin! 

Alta Badia is located between 1,400 and 2,700 meters (4,593-8,858') above sea level and for skiiers, this altitude ensures optimal ski conditions throughout the winter. Fast and comfortable ski lift connections, miles of wide, well-groomed slopes (130km / 81 miles), and the spaciousness of the ski area allow you to enjoy pleasant and safe skiing days. Breathtaking views of the most beautiful peaks of the Dolomites, charming mountain huts and first class mountain restaurants round out the appeal, making Alta Badia a ski area for connoisseurs. Alta Badia is part of the Dolomiti Superski carousel; with a total of 96.5 kilometers (60 miles) and 450 lifts, the Dolomiti Superski is the biggest ski area in the world, and a UNESCO World Heritage Site.

At 8:00pm, join us for a welcome dinner at the Hotel and Spa Rosa Alpina, San Cassiano in Alta Badia, where you will be welcomed by chefs from this region, the South Tyrol (Südtirol in German, Alto Adige in Italian).

Day 2 ~ Monday, January 18 
Morning on your own to ski, explore Alta Badia, or relax!

At lunch, join the Cooking Masterclass at Ciastel Colz. Famous chefs will prepare a meal using ethical ingredients. With the help of a sommelier, they will guide you through a tasting combining great wines to go with the dishes that have been prepared. At the end of the class, the cooked meals will be eaten together. These cooking classes are conducted for a limited audience each day.

In the late afternoon, join the Chefs Talk & Tasting at the Conference Hall in La Villa. Each day, two chefs, with the help of an artist, designer, or scientist, will host an educational talk for other participating chefs and event guests. The tastings that follow range from wine, food, tea and infusion, and craft beer.

In the evening, enjoy the Care’s dinner, part of the Ethical Guest Project of this first edition of CARE’s.

Day 3 ~ Tuesday, January 19
Morning on your own.

At noon, join today’s Cooking Masterclass at Ciastel Colz.

In the late afternoon, join today’s Chefs Talk & Tasting at the Conference Hall of La Villa.

In the evening, enjoy the "Ethical Gala Dinner" at Hotel and Spa Rosa Alpina. Enjoy a celebratory evening where the chefs prepare a gourmet dinner using ingredients that are usually considered “waste”, turning them into culinary delicacies. This is intended to be “proof” that all parts (well… almost all parts) of raw ingredients can be used in preparing a meal, and that haute cuisine doesn’t necessarily mean waste: it does not have to be made only with expensive and exotic ingredients, but can – and must be – sustainable.

Day 4 ~ Wednesday, January 20

At noon, join today’s Cooking Masterclass at Ciastel Colz.

In the late afternoon, join today’s Chefs Talk & Tasting at the Conference Hall in La Villa.

Enjoy the final dinner at one of the 7 most famous rifugios of the world. For over fifty years, Club Moritzino has been overlooking the Badia Valley from the height of 2,100m / 6,890' of Piz La Ila, and is today one of the most popular destinations for skiers and gourmands.
