On our Epicurean Hiking Adventure, you can do just that. You’ll delight in sensory pleasures throughout the trip, from sight and sound to smell and taste, plus the physical sensation of hiking each day, followed by a visit to the spa! Throughout your trip, you’ll hike in different areas of Alta Badia, the heart of the Dolomites. Set in a deep valley surrounded by towering pinnacles and ever changing light, not only is this area spectacularly beautiful, and a UNESCO World Heritage Site to boot, it is also renown for its food! Each day you’ll have multiple gastronomic experiences – from leisurely lunches, garden tastings, al fresco dining, and a Michelin star-rated meal. You’ll taste the traditional regional fare, plus gourmet Italian and international cuisine. You’ll also have a new oenological experience each day – with experts presenting wines from the surrounding regions and beyond. 

The 4-star Hotel Ciasa Salares will not only be your accommodation and the point of departure for many of your hikes, but will also play host and guide to the culinary and oenological portion of your experience. Family owned and operated since its inception in the 1960s, Stefan Wieser and his son Jan Clemens are the third and fourth generations to continue the family’s love for hospitality. Not only that, both are sommeliers, with Clemens being one of Italy’s youngest! It will come as no surprise that the wine cellar here is one of Italy’s largest, with three rooms whose walls are lined by 24,000 bottles, representing 1,800 different wines. The family’s love of wine can only be matched by their passion for food, with three notable restaurants at the hotel – Wine Bar Siriola, Ristorante La Terraza, and the wine cellar La Cantina di la Siriola. This is a truly an experience just waiting to be savored!

Day by Day

Day 1 ~ Arrive in Alta Badia, Dolomites – “Heroic” Wine Tasting & Dinner 
Arrive in Alta Badia on your own (private transfer available on request), and check into your hotel. Alta Badia is located in a large valley between 1,400 and 2,700 meters (4,593-8,858'), surrounded by the gorgeous peaks of the Dolomites. At your hotel, Ciasa Salares, you will find pure hospitality here. Furnished in an alpine style, complete with fir paneling and elegant hand crafted textiles and furniture, the hotel features a pampering spa, and is also a reference for gourmets.

This evening, enjoy a welcome wine tasting, hosted by a local wine producer, the first of many you will enjoy on your trip! Tonight’s focus will be “Heroic Viticulture” – wines produced in difficult growing conditions, from high altitude and mountain vineyards (over 500m / 1,600'), like those surrounding the Dolomites. A special Al-Fresco dinner follows – “Scents of Alto Adige” – which combines cuisine from the region with magical surrounding landscapes.

Day 2 ~ Hike to Santa Croce – Explore the World of Sparkling Wine
After breakfast, meet your hiking guide who will provide a trip briefing and orientation.Today you’ll hike to the Santa Croce Sanctuary at the base of the Sasso della Croce. You’ll walk uphill passing through a number of closely knit hamlets formed of clusters of ancient shingle-roofed timber farmhouses and barns, and continue through pine forest with great views of the Santa Croce, Conturines, and Sella mountain groups. Enjoy lunch at Rifugio Santa Croce / La Crusc, one of the oldest rifugios in the region, with a very inviting atmosphere and delicious food! (4-5 hours hiking 11km / 7 miles, 590m / 1,935' ascent and descent. Both easier and more challenging routes are available.

Tonight’s oenological experience begins in the Ciasa Salares’garden, where you will discover the world of bubbles: Champagne, Franciacorta, Lambrusco, sparkling sur lie wines, and other sparkling wines from unconventional vineyards. Your tasting will be accompanied by home-baked breads, specialty hams, and culatello – one of the most prized salumi in Italy, from key regions including Parma, San Daniele, and Zibello. After your tasting, enjoy dinner at the Wine Bar Siriola, which features highly international and modern dishes, and the best of Italy’s wine labels, with over 1,800 wines in stock!

Day 3 ~ Hike at the Foot of Settsass Mountain – Explore Biodynamic Wine 
In the morning, travel to the Pralongia High Plateau, either on foot, or with the help of a cable car, depending on your interests and energy level. These vast meadows are surrounded by towering mountains, offering 360-degree views, including the Marmolada (3,343m / 10,964'), the highest peak in the Dolomites and home to its largest remaining glacier. When you reach the foot of the Settsass, continue to Ciasa Salares’ private hut “Piz Sorega.” Enjoy a light al-fresco lunch, with the wine theme “is Rosé wine really that good?” presented by a local wine producer. (1-6 hours hiking, depending on your interest and fitness level.)

Tonight you’ll be treated to a “Chinoise Fondue” dinner, served in the wine cellar. This fondue is made with three different fillets of meat, that you cook in a boiling vegetable stock, with seven homemade dipping sauces. In fact, it’s the neighboring Swiss way of eating a Chinese hotpot! Your meal will be accompanied by wines produced using biodynamic agriculture techniques, a focus of Ciasa Salares’ wine cellar. The goal of biodynamic farming is sustainability, leaving the land in as good as or better shape as the farmers found it for future generations, using only natural materials, soils, composts, and fertilizers. A local producer will be on hand to help you understand the fundamentals and importance of biodynamic farming and wine production on the environment.

Day 4 ~ Hike to Rifugio Scotoni – Dinner at Michelin 2-Star-Rated Restaurant La Siriola
After breakfast, transfer to Capanna Alpina (1,726m / 5,663'), a restaurant built at the edge of the Fanes-Senes-Prags Natural Park. Hike uphill to Col de Locia (2,069m / 6,788') from where you can admire the beauty of Alta Badia from above. Enter a fairy tale valley with green pastures, and continue uphill, before descending to Lago di Lagazuoi. The lake’s incredible green waters are beautifully framed by pines, with a backdrop of the sheer walls of the Cima del Lago and the Cima Scotoni. From the lake, descend until you reach your lunch spot, Rifugio Scotoni (1,985m / 6512'). After lunch, descend to Capanna Alpina for your private transfer to your hotel.(~4-5 hours hiking, 10km / 6 miles, 1,302m / 4,270' ascent & descent. Both easier and more challenging routes are available.) 

Tonight you are in for an incredible experience, dining at the Michelin 2-star-rated Restaurant La Siriola. Not only is this the preeminent restaurant of your hotel, but it is also touted as one of the best restaurants in the Dolomites, if not the world. Eating here isn’t simply dinner – it’s a one of a kind experience. La Siriola is under the command of Executive Chef Matteo Metullio. Taking command of therestaurant in spring of 2013, he has guided the restaurant from it’s original one to it’s current two Michelin Stars.Tonight you’ll be treated to the ultimate fish-based menu at La Siriola, presented by Chef Matteo himself. The meal will be paired with Austrian & German wines, with a wine expert explaining the pairings. Dinner will be followed by a trip to the Chocolate Room, to discover the world’s most precious chocolate, of course complemented with a wine pairing.

Day 5 ~ Hike in Puez-Odle Natural Park – Traditional Ladin Dinner, Undiscovered Wines, and Local Spirits
Take a short private transfer to the town of La Villa,to achair lift that will take you to the start your hike. Begin with a steep ascent on Mount Gardenaccia, hiking towards Rifugio Gardenaccia (2,050m / 6,726') where you can stop for a short break. Hike through rocky terrain into the Puez-Odle Natural Park, and on to Rifugio Puez (2,475m / 8,120') where you will stop for lunch. Be sure to take in the geological richness of the area that surrounds you: this rifugio lies in an isolated location, in a large, remote green crater, full of light-colored rocks that look like small islands, and make the landscape appear wild and mysterious.(~7-8 hours hiking 14km / 8.7 miles, 960m / 3,149' ascent, 1,020m / 3,346' descent.)

Tonight enjoy a traditional Ladin dinner in a local barn-house, paired with wines from “the undiscovered grapes of Italy.” After dinner, return to the hotel to sample local and regional distilled spirits, including local grappa. Sit by the fireplace and enjoy this final tasting, assisted by a local producer.
